Forskning
Jeg jobber både med ernæringsepidemiologi og klinisk ernæring.
Epidemiologiske prosjekter omfatter analyse av kosthold og kroniske, ikke-smittsomme sykdommer som hjerte-kar, kreft, fedme og diabetes, men også nevrodegenerative sykdommer. Jeg har ledet ernæringsdelen av HUSK3 (Helseundersøkelsen i Hordaland, 2018-2021, se https://husk.w.uib.no/. I HUSK undersøker vi,i en eldre kohorte, sammenhengen av kosthold med vektutvikling og muskel helse, forkomst av diabetes og med Parkinson sykdom. Også undersøker vi kosthold og risiko for Parkinson sykdom i den europeiske EPIC kohorten, i lag med DKFZ Heidelberg i Tyskland (https://www.dkfz.de/epidemiologie-von-krebserkrankungen/epic). Videre er jeg interessert i årsaker og konsekvenser av sykdoms-relatert underernæring.
Vi gjennomfører kliniske studier med matvarer, ingredienser og med næringsstoffer. Vi er spesielt interessert i helseeffekter av brød, fullkorn og kostfiber, og har gjennomført en del studier med brød, beta-glucan og andre kostfibertyper. Vi fikk støtte fra EU til et internasjonalt forskningsprosjekt Carbhealth (https://www.healthydietforhealthylife.eu/project/carbhealth) og gjennomførte også en store vekttap-studie med ulike dietter som del av Mohn Nutrition Research Laboratory (Trond Mohn stiftelse (tidligere Bergen research foundation) https://www.nohnfoundation.no/); https://www.uib.no/en/nutrition/120713/about-mohn-nutrition-research-lab
Videre er jeg interessert i helse effekter av mikroplast. Her forsker vi på dyrestudier på effekter av mikroplast, men gjennomfører også observasjonsstudier hos mennesker. Vi fikk her støtte fra UiB gjennom det marine satsningsområdet og EU gjennom SEAS programmet https://www4.uib.no/en/research/research-projects/seas-shaping-european-research-leaders-for-marine-sustainability
